Try this basic chizcake and add lime juice.
1 lb cream cheez
1 1/2 lb sour cream
1/2 lb sugar

cream together and add 4 eggs, beat smooth.
bake at 325 in a water bath, approx 1 hr til set in the middle.

I doubt you can tell the difference between key lime juice and non key limes, drinking it straight you couldn't tell the difference ( or I).
Similar to using trick ingredients in so called artisan breads,
such as sea salt (sure!), they don't add anything in the end....but its fun.

Imagine saying you used costa rican sugar in this chizcake, you can really tell the difference right? same thing, theres no way.
