Need rainbow bar or cookie recipePosted by Joan Ross on July 07, 1997 at 14:56:48: I'm looking for an ethnic specialty ( italian or jewish ) for rainbow or neopolitan cookie bars. these I believe are almond paste layers tinted pink, yellow and green with jam between layers and a cocolate glaze and often sprinkled with jimmies. Ive found most bakers don't know what I am referring to. There doesnt seem to be such a recipe in professioanl pastry or baking books. I really wish a recipe for this. thank you!
