I'm from Venezuela. What we do at home and also found in a book of replacement ingredients is to add 1Tablespoon of Vinegar for every 1 cup of milk and let sit for a few minutes you will see the milk coagulate. I will have to check the precise recipe and make sure I have the correct measurement if it's different I will send an ammendment tomorrow.
