I'd 'guess' it was originated in escoffiers time, he did a lot to get the elements of food organized.
I've made it with and without whipped cream, if made minus the cream it should be served asap or it will collapse, however it is more pleasant and lighter this way.
There are food history books available, try amazon.com search engine.
Many people are interested in the historical aspects of dishes, not many of them are working in kitchens though.
I suppose most mechanics couldn't tell you how the first carburator venturi was jetted either.
