I have recently moved to southern Ohio from the Okanagan area of British Columbia (Canada - frozen wasteland (NOT!) and am having difficulties with my bread.
I always made great bread up in BC, (dry low humidity) but since moving to Ohio, my bread just isn't working out. I find it is heavy, doesn't rise well, and just isn't the product I used to make. I am sure that humidity, elevation, flour product all have made their contribution to my failure. Any suggestions or secrets to good bread making in the humid north east?
