Well, I don't add any salt, no need if using the usual ingredients but anyway it definately sounds like you're just doing it wrong in the process.
Absolutely no problems using bread flour.
Don't know what to tell you, maybe compare the recipe to the one on a bag of chips.
See whats way off.
