Take a look in the Great Hall page in this site, scroll down to 1/3/98 and see the mssg string started by Susan asking about which books we use.
It started an interesting exchange , she ended up getting a couple of the ones I recommeded.
The French series by Bilheux / escoffier are hard to beat for baking.
