theres a proper way to make this but I'll bet my rolling pin they didn't do it.
Start with zabaglione (sp) and blend 50% with whipped cream. Thats a spumone,
bakeries don't tend to do it like that because of cost and time.
Its very likely they just mixed pastry cream with whipped cream and added a dash of whatever (Moscato, dry marsala).
But if I had to guess it might have been pistaccio flavoring or almond.
Unless you paid $30 I don't see any way they could make it the proper way with all the booze cooked into the base.
Most bakeries I worked in used hi ratio cake formulas, duncan hynes cake mix is identical .
I think anything you come up with is gonna be better.
