Hi Nici,

I think this sort of info is more usefull than recipes, recipes can't convey skills.
Theres no secrets in baking but theres a lot of inside tricks you need to know to survive in business.
Anyone can bake but most bakers fail in business, I met most of them through the years working around they aren't happy types.
I consider one of the benefits to apprenticing is the business knowledge thats passed on.
Its not something you can learn in classrooms either , I had a chick working for me who was studying for her masters degree at Boston U, she thought it likely that none of her professors could actually run a business.
Most people who succeed have intuition that when they hear correct information they realise it to be so.
"In business for yourself " by Bruce Williams is a very good read, its all street smart business knowledge.

So, are you ready to start making kuchen now? , linzers by Nici.
