Not for some people, but then.... you wouldn't feed a baby honey either.
Heres the scoop on eggs, chickens at poultry factories are fed ground up parts such as feet and heads which is mixed in the meal.
Chickens can't process this type of food , not being carnivores.
Instead of stopping the practice, congress ,greased by lobbyist money, decided to make the public change their cooking methods.
It has always been safe to eat raw eggs, its safe to leave them unrefrigerated, I never chill eggs, I use at least 20 dozen eggs a week.
The public has been conned and a shamefully high number of professionals who ought to be more knowledgeable about something so obvious.
I make and sell choc mousse with raw eggs every day, sold literally hundreds of thousands. Never had a problem, never chilled an egg.
More people were killed by coca cola machines falling on them last year than eggs, btw there are NO statistics available re egg.
If you're concerned about sticking your neck out commercially just buy pasteurized frozen yolks ($6 per half gal) and ditto whites.
I'd do it that anyway to save time.
I don't know what frozen custard is, sounds like creme anglais based...which should be cooked.
Not to rain on your parade but a pudding shop opened up last yr in Boston and promptly failed, you need to be a bit more diverse to spread the risk.
Get proper training or you won't have a dogs chance.
