A sheeter sure is a luxury if you had to work without one you know the difference, then again a 60 qt mixer is a luxury as is a car, when I was wholesaling to starbucks it was 900 croissants ready for delivery by 6 am 7 days a week, the sheeter was more than luxury then. I could probably live without it now but if its here might as well run the dough through it.
