ACF apprenticeship program requirements

I am 22 and graduating from Rutgers Univ. with honors and a BA in Hispanic Civilization (was gonna do the teaching thing but changed my mind).
The ACF Apprenticeship program seems like it is just what I am looking for, but I need more information on what employers are looking
for. Do you need to already have experience or lots of skill? I have worked as waitress, dishwasher, cafeteria server and now I am
an assistant in a non-vocational cooking school. I think I can pick up a lot from observing, but I also need direct instruction. What should
I look for in an employer and location (any especially successful ones, anywhere)? What about Disney World? Is this program right for me? Any opinions or advice on the application process will be greatly appreciated!
