I was in a similar situation when opted for a school. Why would your chef want you to apprentice? Like Gerard said consider yourself lucky or talented, or more likely you're needed. If you leave he has to train a new staffer and I'm sure they aren't paying apprentices based on what they deserve. The bottom line is if you choose school or apprenticeship you have to pour your heart into it. Either way you will only get out what you put in. I know great culinarians that graduated from CIA but also some pretty useless came from the same school. The same is true of an apprenticeship.
