It bears discussion for purposes of ACF apprentices, perhaps, or for some of the classes required for certification. I'm sure you can pick up as much by reading or watching TV as you could over the net at this point, but so much of it comes down to efficiency and practice and actually tasting the product or examining it with your chef right there. It's a hands-on profession. It needs to be learned and taught that way. I hope my hair stylist, surgeon, massage therapist and dentist actually went to a school... Karen
