Its a little early to be concerned about a spacifid cuisine. Learn the basic classical techniques then you cam master any cuisine.

There is no best school for every one. I went to the CIA it offers as many resources as any and more than most programs and got a great education, but it is a diploma mill. You have to use what the program offers you to get the best education. In general the student makes the program, the program doesn't make the student.
