My own Business?

I love to cook and be creative, I see myself as an artist.
Food is my medium just as clay, stone or paint and canvas
are to other artists. I have been catering parties and
other such events for friends, family and even my church
for a couple of years. My dilema is that I decided to make
this a side business and I seem to be spending more time
on the business end rather than practicing my art. I am
still attending Culinary School while working a full time
job in another field. I can't afford to "quit my day job"
and become a full time chef, even if my training was complete.
I'm also afraid that if I work as a chef for someone else,
my creativity will be squelched.
What is you opinion?
