I would advise that you work in the industry for anyone with a good
restaurant, who has an apprenticeship program in place, or try
the big hotels, they always have apprenticeships. Go to Portland
or Seattle, Vancouver BC. One thing you could try is, there is
a program set up in the Canadian Pacific Hotels in Canada, where
they take apprentices, especially at Banff Springs, Lake Louise, and
Jasper in Alberta, Hotel Vancouver, and the Empress in BC.

There is also the Four Seasons in Seattle, and Fullers.

Look into the Pacific Institute of Culinary Arts (PICA) in Van, BC

Check for the back issues of Gourmet Magazine Oct. 96, probably 97
too, it has a good list of Seattle restaurants, the May issues do hotels.

Work for a year before you go to cooking school, to make sure you
want to do it.
