Also, Disney World has a 3 year ACF sponsored apprenticeship program. They require 6 months work experience in a professional kitchen, a high school diploma or equivalent, 2 letters of recommendation, and a completed application with an essay. The tuition is roughly $2000-$2500 a year. A bargain compared to most schools. On top of that, they pay you, train you, and educate you. It's a highly competetive program to get into, but it may be worth checking out. Their number is (407) 827-4706. If that doesn't pan out, the state of Florida has a ton of programs. Good luck
